Senjunomukashi is an excellent matcha. It is a blend from Joyo, just south of Uji, Japan, and the surrounding areas. It is considered a thick matcha, meaning it has sufficient umami that provides sweetness and mouth-filling flavours, allowing one to add more to create a texture similar to thick mud. That is appreciated in traditional Japanese tea ceremonies.
This tea is made from a raw tea called Tencha that is air-dried, and then the dried flakes are ground between two stones, just as in centuries ago. The result is a fine powder that is almost neon green.

This is a mouth-filling, even a head-filling brew. It is a “thick” matcha. More matcha powder can be added so that your brew becomes like thick mud. This is what is consumed in Japanese tea ceremonies. High levels of umami give a lovely sweetness to Senjunomukashi. The vegetal flavors of spinach and Swiss chard abound.
